I have been frustrated with the gap between my landscape photos and my food photography. I am not one of those people who cooks dinner for lunch, and I like to eat what I cook which is usually at night. My place in New York has some light but nothing like the photos I can take upstate so my food photo’s lack something. I had gone up to B and H photo a while ago and purchased a Lowel EGO lights but there was something so difficult about setting it up. I know that sounds odd but I made the purchase and got frustrated and put in storage, a bit sad that I had “wasted my money.” My dyslexia sometimes gets me into trouble, as I do not like to read directions.
I was listening to NPR Sunday morning and they were interviewing Rick Bayless and his guacamole with tomilito really got me excited. I did not have any tomilito but I liked the idea of a tomato-less version. I loved it! I did not add lime, but I really loved how creamy and clear it was without it. YUMMY!
1 clove garlic minced or pressed
1 onion, minced
1 tablespoon Indian cilantro chutney(I have a jar of this magic stuff it is WONDERFUL!)
lots of kosher salt
Preparation: remove skin and place avocados into a bowl, mash the flesh using a wooden spoon. Dice onion and garlic, mix season with LOTS of salt. Mix and serve with corn chips….
