4 ounces Italian bread, cut in ¾-inch cubes (about 4 cups) believe it or not I used hotdog rolls, it is best to use whatever bread you have. Good rustic bread tastes best but if you do not have it in the house just make do, and when you do have nice bread it will taste all the tastier. I think variety is the spice of life!
3 tablespoons olive oil
Coarse salt and ground pepper
1 head of romaine lettuce
A few watercress leaves(about 1/3 a bunch)
FOR THE DRESSING:
¼ cup fresh lemon juice (from 1 or 2 lemons) I like to only add one lemon because I think the lemon can be too intense.
¼ cup reduced-fat mayonnaise
¼ cup grated Parmesan cheese
olive oil to make the dressing more smooth(optional)
2 anchovy fillets, roughly chopped (optional)
1 small garlic clove
