Kale is intimidating but it is oh so gorgeous. I love buying it, it is the most handsome of all the greens but I find it the hardest to cook, I have found one recipe that I love: an Indian dish with potatoes, kale and spinach. It is dinner in itself, and is healthy and delicious.
Saag Aloo–Fragrant Buttered Greens with Potatoes Ingredients:
1 pound potatoes
1 pound fresh spinach or 1-ten ounce frozen chopped spinach
1 pound fresh kale, mustard, beat or collard green or 1-ten ounce frozen greens
5 tablespoons canola oil or ghee(I did a mixture of butter and canola)
2 teaspoons cumin seeds
2 1 inch pieces grated fresh ginger root
2 garlic cloves, minced
2 teaspoons garam masala
red chili powder to taste
salt to tastePreparation:Scrub potatoes and boil them in their skins until almost, but not quite, done. Leave to cool, then cut into small cubes. Meanwhile, if using fresh spinach or kale, remove the coarse stalks then rinse and chop coarsely. Mince the garlic and ginger and measure the spices out into a little bowl. Heat oil in sauce pan brown the cumin seeds until they turn fragrant, then add garlic and chili then ginger. Add the spices, and a little water if necessary. Cook for a few minutes, then add spinach and kale/greens add a cup or more of water, add the potatoes and mix well then cover and simmer gently until ready, stirring once or twice to prevent sticking. It’s done whenever the potatoes are cooked to your liking and greens are soft. ENJOY!
