Onions are amazing and I always make sure to have onions on hand, you can make almost anything with them: caramelize them, top salad and pizza’s with them, add them to stir fries, and use them as the basis of a proper curry.m hey are healthy too!
Here is a lovely French onion soup that is perfect for the cold days we are having.
French Onion Soup
- 1 pound onions, finely sliced.
- 1/4 cup butter.
- salt and black pepper
- 1/2 teaspoon Dijon mustard
- 2 teaspoon plain flour
- 3 3/4 cups beef broth
- 3/4 cup white wine
- 4-6 slices French bread lightly toasted
- 1/2 cup Parmesan cheese.Preparation: Melt butter in large pot, then add onions, salt and pepper and mustard. Saute at low heat for about 20-30 minutes. Add flour, stir, add stock and white wine, bring to a boil, then lower heat and let simmer for another 30 minutes. using individual bake safe bowls, place sliced bread over soup, make sure to put a spoon full of soup over the bread, than add cheese, and place under broiler for a minute or until, crusty and golden brown, serve immediately and ENJOY!
