2 medium onions, diced.
Butter to suate onions. around two tablespoons.
1 butternut squash, pealed and cubed.
6 cups chicken stock(I use Knorr bullion)
1 teaspoon of garam masala
ground cinnamon as garnish
Butternut Squash Soup
I can not say enough about butternut squash soup. I recently had this soup at my friend Meredith’s wedding, and it was so good, the whole table was really impressed, and it really does taste like fall.
Preparation: Saute onions in butter, add chicken stock and butternut squash and bring to a boil and cook squash thoroughly. When cooked but soup in blender and puree, put back into pot and season, with nutmeg, and garam masala, garnish with cinnamon. This soup is excellent with cheesy garlic bread.
