Many Adirondack Cabins are outfitted with a gas stove but no running water, so roasted veggies are a great way to prepare your vegetables. We roasted Broccoli one night and Asparagus the next. This recipe is from my Cousin’s fiance, Owen and it was so delicious! The lemon juice makes the roasted veggies zesty, which is perfect after long hikes.
Roasted Veggies, with Lemon and Pepper
- Broccoli or Asparagus
- Olive oil
- Juice of one lemon
- Preheat oven to 450 degrees.
- Dress vegetables with olive oil, lemon juice and salt and pepper.
- Roast for 15 -20 minutes.
