This was my favorite dessert as a kid, it is so delicious!
1 tablespoon gelatin
1/4 cup cold water
2 cups canned crushed pineapple
1 cup sugar
1/8 teaspoon salt
1 cup of cream, then whipped
1/2 teaspoon vanilla
Preparation: Soak gelatin in cold water. Heat the pinaapple stir in sugar and salt bring to a boil, then remove the pot from the stove. Stir in thickened gelatin. Pour mixture into a glass triffle dish and chill in the refrigerator until it starts to thicken. Whip the heavy cream till it just starts to thicken. Add 1/2 cup sugar to the heavy cream and whip just until soft mounds appear. Fold in vanilla. Fold the whipped cream into the cold pineapple mixture and return to the refrigerator. Chill until set. Serve chilled.
