As many of you know I was born in Iceland but mother is a Manhattanite whose paternal grand parents were Russian Jews. Her grandmother migrated from St. Petersburg where her family were tailors, one famously, to the Czar of Russia. My great grandfather’s parents emigrated from the Odessa, Ukraine where his father had a vodka distillery. It was under the threat of the Russian pogroms that both families emigrated to the USA and settled in the then hoppin, cities of industrialized Pennsylvania. My great grandparents actually met under the bronze eagle at Philadelphia’s famous Wanamaker department store. It was there that Louis my great grand father, chatted up my great grandmother Billy, and the rest is history!
My cousin, Ramona came over to share Hanukkah and her Menorah with my sisters and I last Monday night, and it was really festive. We made Potato Latkes and home made apple sauce and we talked….. We served the Latkas with sour cream, kosher salt, garlic pickles and home made apple sauce! It was lovely and now I want my very own Menorah.
Potato Latkes
INGREDIENTS:
- 7 peeled and shredded potatoes
- 3 small shredded onions
- 4eggs, beaten
- 1/2 cup all-purpose flour
- 1 1/2 teaspoons kosher salt
- olive oil to cover pan
DIRECTIONS:
- Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible.
- In a large bowl stir the potatoes, onion, eggs, flour and salt together.
- In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot!
My Sister’s Apple Sauce
INGREDIENTS:
- 6 cups (6 medium)apples skins removed and cut into 3/4-inch pieces
- 3/4 cup water
- 1/4 cup sugar(this is optional I like it tart so I never use sugar)
- a tap of butter
- 1/2 teaspoon ground cinnamon
DIRECTIONS:
- Combine apples, 3/4 cup water and sugar(to taste) in heavy medium saucepan.
- Bring to boil, stirring occasionally.
- Reduce heat, cover and simmer until apples are very tender and skins are softened, about 15 minutes.
